Recipe Ingredients:

1 whole pie crust, refrigerated, unbaked

½ cup chopped onions

1 cup low-fat Swiss cheese, shredded

1 1/3 cups egg substitute

1 ½ cups reduced-fat milk

1 10-oz bag frozen chopped spinach, thawed, with all water squeezed out

6 cups cantaloupe, cubed

Preparation:

Preheat oven to 450 degrees F. Sprinkle cheese and onion onto pie crust. Mix all remaining ingredients together in large bowl. Pour mixture into pie crust. Bake 15 minutes. Reduce heat to 300 degrees F and bake 30 to 35 more minutes, or until knife inserted in middle comes out clean. Let stand 10 to 12 minutes before serving. Cut quiche into 4 pieces. Serve with cantaloupe on side.
